With a buttery core and a hint of mushroom earthiness, this cheese is best enjoyed in its purest form. Made using grass-rich Cornish milk, it's wrapped in nettles, which are foraged by hand, frozen to remove the sting, then painted onto the cheese. After 4-6 weeks of aging, the edible rind blooms, creating a beautiful snowflake pattern. And the name? Yarg spelt backwards is Gray, the surname of the cheese's inventor, Alan.
