Secret Smokehouse began in a Stepney shed by Scottish-born, London-based fishmonger Max. Now based out of a railway arch in Hackney, Secret Smokehouse supplies some of London's best restaurants, like Quo Vadis and The Clove Club. Using traditional techniques, the Scottish-farmed salmon is hand-filleted, hand-cured using only salt, and then oak-smoked. The result is a gentle smoke and melting texture. The focus isn’t just on taste – they became the first smokehouse in the UK to offer sustainable land-based salmon.
